The Groundworks of Evangelion series of books is my absolute favorite. I still need to complete the set, but they're pricey. In general, any artbook that includes sketches and concept art I absolutely love. I like being able to see the process.
Collections of finalized works are pretty, but don't give me much value. Sketchbooks and concept art books let me see what they were thinking. It's also nice to see what the style was before it was converted into a final product so it can be mass produce.Non-weeb favorite art books? Art of Zootopia is a quality book.

Like with nuStar Wars, the movie was heavily cut and all the cut content is in the art book. The concept artists were allowed to draft their ideas in their own unique styles, which results couple of the pages looking like they're concept art for DnD or MtG. Not so much about the original storyline or even why the director change. I got the impression the book danced around that topic because it was sensitive. It focussed mostly on the character designs & their evolution, and the trips to the Scottish Highlands the artists did for research purposes & inspiration.
Unfortunately my books are in storage as i'm between homes so I can't refer to them atm.I think there is a brief mention that they wanted to show how the early kingdom was split, the rise of Mordu, and the witch when she was much younger. But it was all scrapped during storyboarding & didn't go any further from there.
Irc it was due to time constraints. The movie was in production for something like 7 years & they didn't want to drag it out any longer. I think it's still Pixars longest production to date.It was while watching the blu-ray with the directors commentary on (something I don't normally like to do) that I learned it was supposed to take place in the winter with lots of snow scenes. And it was the rendering of the snow that gave them issues.
The director mentions that 95% of the movie was rendered before being entirely scrapped. He even commented that copy 'resides somewhere in Disneys vaults' & joke that maybe Disney will release it 50 years from now as a special. I find that very intriguing & would kill to see the original.Back on-topic about art books, I also have the Art of Frozen. But i'd like to find 'The Art of Tangled' & 'The Art of Wall-E'.
